Yesterday I made a recipe for tamale pie and it called for jiffy corn muffin mix, which I know was sweet, but I followed the recipe anyway because I thought well maybe it helps balance the spice and tomato.
It didn't. It was way too sweet and prob will toss the leftovers. This always happens to me when using online recipes. Every time I go against my better judgement and follow the recipe, it turns out horrible.
So I'm just warning you guys, if you find a recipe online for tamale pie or Mexican cornbread casserole, don't use jiffy mix and don't add sugar because it tastes so wrong!

good to know.....I am diabetic and would avoid that.....

I'm of the opinion anyway that if you have to add excessive sugar or salt to your food, you aren't cooking it right. Herbs and spices are fine! Why didn't I follow my own advice? (Face palm)

Sounds like a good motto, Ghostwolf! I try to follow chefs and web sites that seem tried and true but even then, there's no guarantee.
