
We had mom's birthday dinner yesterday. She wanted a glazed pork roast with potatoes, carrots, celery, onions, and Brussels sprouts. She also wanted a broccoli salad and a chocolate cake.
So I got up at 8 yesterday, cleaned, then started cooking so we could have dinner at 2.
First I baked the cake. I used a cake mix and store bought frosting, but instead of oil I used Mayo, and instead of water, I used Coke.
While the cake was baking I got the roast ready. I put it in a 9x13 glass pan wrapped in foil first. I let that bake while I prepped the vegetables, then I took the roast out and transferred to a different pan. The grease that cooked out of the pork loin was left in the pan. I added the vegetables to that with some Mrs dash and returned to oven, uncovered, with a little water.
Then the roast I put in another pan got rubbed with blackened seasoning, dried cherries, and a glaze I made of spicy bacon jam and sweet onion jam. (You can buy those at most groceries)
Around the roast I added chopped onion, celery, 2 pears, and half a bottle of angry orchard Rose. Then I put the foil back on and put it back in the oven when the cake came out. Altogether it baked for an hour and a half I think.
Now after all that, I had to make the salad. I used the rest of the onion jam, honey, white wine vinegar, and just a little of the spicy jam to make the sauce. Then I chopped fresh broccoli and cauliflower, omitting the stems because I don't like those and neither does mom. I added some shredded carrots, red onion, bacon bits, golden raisins, and sunflower seeds, then tossed in the sauce and put in refrigerator until ready to serve.
It all turned out really moist tender and yummy! Here is a pic of some of it.

Having leftover roast tonight with rice I got going in the instapot with a can of cream of mushroom soup. And just regular salad.
