
Hello everyone! I had this for lunch yesterday. I prepared it with things that I already had at home but I am learning how to eat as a Diabetic and I have other health problems too so it is challenging but possible. This actually didn't involve any cooking. I made a Diabetic friendly version of Peanut butter and jelly along with some fruit and microwaveable popcorn. So I used 1 slice of Sara Lee honey wheat bread and I sliced it in half to make my sandwhich. I used Skippy no sugar added peanut butter. Smuckers sugar free apricot preserves but you can use any type of sugar free preserves or jam that you like. I actually have sugar free strawberry seedless jam that I could have used also but I bought the apricot preserves for a recipe so I wanted to try it. I had one small gala apple that was a little smaller than a tennis ball cut up. Some home style microwaveable popcorn. And a small cup of 2% milk. I used a portion plate and I cut my half sandwhich in half again and put it in one of the sections on my plate and put the cut up apple in the other smaller section on my plate. The popcorn was in the largest section of my plate. You can actually eat a good portion of popcorn. Not the whole bag of course but it only has 3g of carbs per serving.Peanut butter has some protein and potassium in it.And peanut butter actually goes really well with apples. Well just wanted to share something healthy that you can have that is inexpensive that you don't have to cook that is quick and easy to prepare.
