
I made shepherd's pie again last night. I think I've got it down to the easiest, laziest way possible to make it and takes maybe 20 minutes. I used to put worcestershire sauce in mine but I didn't last night and it was still good.
Lately I've been shopping at a cheap basic store similar to Aldi. I get alot of canned goods there, which are very good, and I've been buying their cheap canned biscuits and using them for lots of different things, including toppings for casseroles such as shepherd's pie.
Brown a pound or two of ground beef with some dried minced onions and salt and pepper. (Or steak seasoning)
While that is cooking, boil 2 cups of water and add in a packet of idaho inst mashed potatoes. You could make 2 packets if you like extra mashed potatoes, or you can use cauliflower rice.
In a small casserole dish, dump together a can of peas and carrots, then a can of creamed corn. Sometimes it isn't creamy enough, then you can stir in a can of cream of celery.
Add in cooked ground beef and top with mashed potatoes and some shredded cheese. You can bake the biscuits separately on a pizza tin or just on top the pie.
There are other seasonings you can add like sage or thyme but this version is super cheap and basic, still tastes good on a cold weeknight. The snow is finally melting so I will be grilling out soon yay!
