I went on a huge grocery haul yesterday like I do every month. I had a coupon for a free 18 pack of eggs, plus we still had eggs, plus fiance works on an egg farm and we get 2 dozen a week. When my dad was alive we had chickens and had alot of eggs if we didn't sell enough.
A lady I work with gave me a big zuchinni since my plant died. Mom said she would make zucchini bread today, that takes several eggs. I told Mom we should have omelettes for dinner.
What are some of your favorite ways to use eggs?

Take a portion of the soup liquid out of the pot, allow to cool or add a bit of water, then beat the eggs into the liquid, finally add slowly back into the warm soup and continue cooking for another until cooked (the soup is hot again for a few minutes).
I'll also add scrambled egg to rice and veggies.
Egg bake (with canned potatoes ....I've never tried raw...but it should work), often another veggie such as broccoli or spinach, sometimes a can of cream soup...sometimes not, a good amount of cheese (8-12 oz....we like cheese), and 8-9 beaten eggs. Bake at 350 until about 170(?...about that). Oh and sometimes I add sausage. Bacon would work too. (My very strange kids hate bacon.) Or ham.

That casserole sounds yummy, I may make that for dinner tonight instead of omelets.
My mom tempers eggs (that's what it's called when you put them in the liquid first then add) when she makes French onion or potato soup to thicken it. Unfortunately it's a bit too hot for soup right now.
The omelettes consisted of onions, stewed tomatoes, green peppers, and cheese. and ham, and scallions! It makes me want to go make one right now!
I fry my eggs and scramble them....I think the idea with them in oven with canned potatoes is a good idea....I used to get canned potatoes from the food pantry....I am now unlikely to use food pantry any more....I do have my inheritance and there are some who have nothing to eat that should get the free food....
When my fiance got home I asked if he brought more eggs. He said no he used them to egg one of his co-workers house. He was kidding....I think.
Invis I wish I knew how to make the Russian wax Easter eggs. So pretty.
