That's because it is part of the nightshade family, like tomatoes. Like with green tomatoes, you have to sweat eggplant first by sprinkling with salt and leaving for 20 to 30 minutes. A bitter liquid will sleep out. You then pat your fruits dry with a paper towel and fry. This prevents them from tasting bitter and hurting your stomach.
If you type in "Turkish stuffed eggplant recipe" into you tube you will find something very similar to what I did. It turned out delicious btw.

ok but I am done with eggplant.....I do not even order it on menu out as I am sure that it made me shit my pants more than one time....LOL
