
So I had the flu last week. Thought I was gonna die. When I finally got my appetite back I had my fiance order us Applebee's. While I was browsing their online menu I saw something newish that looked really good. It was honey pepper chicken tenders with 4 cheese Mac and cheese. I thought, I can make that at home cheaper and healthier.
So that's what I did last night and omg it turned out yummy! I'm having leftovers for lunch. I will do my best to share the recipe below. I should have taken pics. Oh well.
SERVES: 4
4 boneless skinless chicken thighs
1 cup almond flour
1 cup panko flakes
Salt and pepper
1/4 cup honey
2 tbsp Asian red pepper sauce
1. Stir together honey and red pepper sauce. Season flour with salt and pepper. Press thighs into flour on both sides, then rub with the chili mixture. Press chicken on both sides into the panko. Fry in desired oil, about 15 mins on both sides, or until crispy and cooked all the way thru.
2. Meanwhile, boil 1/2 pound whole wheat penne pasta. Drain and return to stove on low heat.
3. Add to the penne:
4 oz Neufchatel Cream cheese
1/8 block Velveeta
1/2 cup shredded mozzarella
1/2 cup milk
3 tbsp bacon bits
1 tbsp chives
1 tsp Montreal steak seasoning
1/2 tsp onion powder (maybe it was garlic?)
Melt all that together. I served mine with salad. I'm not saying it's the healthiest thing in the world but it is lower in fat and calories than the restaurant version, higher in fiber, lower in sugar, and it's the proper portion so you don't over eat. Not to mention cheap!
