I cooked today. Been in a pasta mood, it's cheap and satisfying. Last night I made whole wheat penne with chicken thighs, spinach, mushrooms, artichokes, and alfredo for dinner.

Today I made 3 casseroles. One was chicken bacon ranch veggie rotini. I made my own sauce. That one I made in an aluminum pan with a lid. I used canned chicken so all I had to cook was the pasta. I put that casserole in the freezer.

I also made a Mexicanish casserole. I browned hamburger and mixed it in another aluminum pan with a can of chili beans, a can of black beans, Rotel, an additional can of green chilies, taco seasoning, Neufchatel Cream cheese, and topped with shredded cheddar. I put this one in the fridge for dinner tomorrow. It will get tortilla chips added to it.

And dinner tonight was Italian sausage, ragu old world sauce, spaghetti, and some other stuff with mozzarella baked with the garlic bread on top.
