How do y'all make you broccoli soup? I made some Sunday and just now eating it for lunch. It's delicious!
I make mine in a big electric skillet. I use butter or margarine to brown some minced garlic and onion, add broccoli florets and 2 julienned carrots. Then I add some unsweetened almond milk, all I had was vanilla and it worked fine. Some ham cubes, about half a small block of Velveeta, a can of low sodium cream of celery soup, Nutmeg, seasoned salt, and white pepper. I let it simmer until everything melts and add more milk if necessary.

I also use a butter base to sweat the onion, garlic, ginger and broccoli florets. I skip the carrots. I put veggies aside to make a cream gravy with a roux base, then add milk, then Velveeta, then the set aside veggies. Some salt and white pepper, though will try adding nutmeg next time. Let it simmer. I don't add meat. Have sometimes added some cauliflower florets in 1 to 4 proportion to broccoli. I do know many restaurants make a beer broccoli cheese soup, but don't have beer so never tried that.

I've had beer cheese on pretzels. Might be good. Nutmeg is a sorta secret key ingredient for things like creamed spinach, broccoli soup, broccoli casserole, etc. Anything creamy with greens or broccoli. Something about it just ties everything together.

I never made it but I had some at work as Panera makes broccoli cheddar soup....but our soup comes in frozen bags and then we heat them in hot water.....so I have no clue what they do to make it.....

Thanks for the tip. I have both ground and whole nutmeg, just rarely use it. I do know it goes into al fredo sauce, and sounds like most cream sauces with other vegetables. Thanks again for reminding me to start using it more. Hugs.,

I think a dash of it goes well in most curry or squash stuff too.
