I used to collect model horses. I still have most of them. Now I collect Egyptian Cat god (bast) figures and I have a kind of sideline in Halloween cats. Started to collect police dept patches when I was in police work. Kind of gave that up though.

Books, I need another book shelf, I buy them and can't bear to part with them.

I'm inclined to collect books but now and again I have a clearout and donate what I haven't read for ages to a charity thrift shop.

The only things I collect new are Christopher Radko christmas ornaments, and old world santa's.

I used to collect CocaCola and then donated some of it and sold it.
I do have a small collection of Willow Tree angels, but I don't collect much any more. It seems to bog me down.
