Hippy I coat my chicken in egg and then Italian bread crumbs. Then put a pat of butter on ea. chicken piece. Then bake:) yummy!

Today is a better day then yesterday was so I have to get some work done. We do a lot of camping during the summer and now it is time to clean up the camper so it can be put away for the winter.
This is my job today and because of body wide muscle pain I just cant get up and get to it.
Well after writing this I plan to pick up the house and after lunch I WILL get to work on the camper.
I hope that everyone has a good day and maybe get some chores done that have been put off!!

We went to town to get out, had coffee and cake and then realised that neither of us were in the mood for shopping, so we just came home, off to get Chinese takeaway later for tea!

well, you can see how off my day is when i'm here at this point. i've already had a long day and haven't done a thing. lovely thunderstorm at midnight, huge fog this morning @ 5am, so i empathathise empathy. can't get that right.

i'm operating on fumes, but i'm dressed and halfway clean. i really don't care how i look. i just have to get to the pharmacy and very happy i checked the bus connection b/c i would've been sitting on a bench for an hour for my connection. i'm afraid to get the flu shot, but i just have to. i can't stand another week on the sofa.

Dix thanks for your suggestion. I didn't have the bread crumbs but I did have a bag 1/4 full of stale lays potato chips. I pounded on them until they were crushed. Then I added chili powder to them. I dipped the chicken breast in buttermilk and then threw it in the chip bag and shook it. Next the chicken breast went into the baking dish with a pat of butter. Pretty good!

I have a recipe somewhere for potato chip cookies. They are very rich. I have only had them from a bakery.

For baked chicken, my favorite coating is Corn Flakes. Adds a bit of a sweet flavor.

I usually dip in milk or half/half. Then toss in a bag of LIGHTLY crushed c. flakes. Very crispy. Tastes almost like fried, with a fraction of the fat and calories.

Hello everyone.....I just joined you all. I'm a full time caregiver to my husband of 39 years. He suffered a massive stroke Feb. 2011. He suffered brain damage and needs assistance with everything.

I like to cook (when I have time), but it caught my eye about your chk. recipe Cindy......add 1/4 teaspoon garlic salt and a dash of pepper to your chicken and corn flake coating. I've found it to be very tastey.
