I found this basic poundcake recipe in an antique cookbook and it became an instant favorite in my family. I just put two of them in the oven because my Brother is visiting and he absolutely loves it!
Poundcake
1 cup butter
1 2/3 cups sugar
5 eggs
2 cups flour
Bake in a greased and floured loaf pan.
300 degrees for 1 1/2 hours
It alwayscomes out perfect! I like to serve slices with any mix of fresh berries, lightly sugared. To make it especially decadent, drizzle a glaze of conf. sugar and lemon juice over the top just before serving!
It keeps well for several days so it's a great do ahead cake if you need something to make around your pain level. I guess I should call it the Chronic Pain Poundcake! Enjoy!
