I LOVE EGGS IN BEET JUICE WITH A TBSP VINEGAR AND 1/2 CUP WATER.....PURPLR EGGS...WITH CRACKERS...GREAT SNACK....AND KEEPS IN FRIDGE...FOR DAYS...I JUST DO 6-8 AT A TIME....AND I KEEP THEM IN A PICKLE JAR.....

Homemade brownies are easy, and the recipe I have uses 4 eggs.
7 ounces chocolate, chopped
8 Tbsp (1 stick) unsalted butter, cut into quarters
3Tbsp cocoa powder
3 large eggs
1-1/4 C sugar
2 tsp vanilla extract
1/2 tsp salt
1 C unbleached all purpose flour
Adjust oven rack to lower middle position and heat to 350 degrees. Grease 8 inch square baking pan (I line mine with parchment). In a double boiler over almost simmering water (I set my stove dial to 5), melt the chocolates and butter, stirring regularly until smooth. Whisk in cocoa powder until smooth, and allow to cool.
Whisk together the eggs, sugar, vanilla, and salt in a medium bowl until combined, about 15 seconds. Whisk the warm chocolate mixture into the egg mixture; then stir in the flour with a wooden spoon until just combined. Pour the mixture into baking pan and spread into the corners with a rubber spatula..
Bake until slightly puffed and a toothpick stuck into the middle comes out with a small amount of sticky crumbs, about 35-40 minutes. Cool on a wire rack 2 hours.
Do not cut brownies until you are ready to serve. Put them in a big ziploc bag or wrap in plastic, and keep in the refrigerator for up to 5 days.
Since your hens give small eggs, I'd add one extra. This recipe originally called for 5 oz semisweet and 2 oz unsweetened chocolate, which is too bitter for me. My above directions makes a slightly sweeter, mellower brownie. It's my favorite brownie recipe! The source for this recipe is the America's Test Kitchen baking Book. If you don't have it, it is one of the best baking books I've ever found, and it's worth the investment. I tweak the recipes a lot to suit my own taste, and it always turns out great.
