Ever since starting the Wahls Protocol Paleo Plus, I've been making chicken bone broth. I usually cook up/simmer/boil some chicken, save the bones and simmer then with water and vinegar (1 T) in the crockpot. Recipe says 2-48 hours. Then add the bay leaf and whatever veggies are desired and simmer for a couple more hours (I simmered for another day). When it cools, pour it into a glass jar. I also take the extra and pour it into freezer bags. Lay them on a cookie sheet so they freeze flat and then store them vertically in the freezer. This has been the handiest recipe. (Oh, I skim out all the bones and most of the veggies before freezing.)

If you cook your soup in the crockpot do you have to reset your crockpot after 12 hours? amazing that you can cook it that long.

Hey Zee, just noticed your reply - I've left the crockpot on for a couple of days at a time. It's supposed to be so much more energy efficient than the stove.

Hi L I just saw your response . thank you. You can leave it on without having to keep turning it on? Mine has an automatic turn off. I think the longest time I can put in is 24 hours will have to check that out. BTW when you simmer the chicken do you usually use a whole chicken? I have legs and thighs. wonder if i boiled them and then used those bones if that would work. How many lbs do you use?

Oh I'm sure that would work, Zee - I have saved bones and froze them until making a broth. I do that with shellfish shells too. :) So far as the automatic shut off, I think I'd just turn it off for an hour and put it back on again.
