Chocolate Zucchini Cake
- Makes 12 servings -
Preparation Time: 15 minutes
Cook Time: 30 minutes
Ingredients
1/2 cup butter
1/4 cup vegetable oil
2/3 cup honey
2 eggs
1 teaspoon vanilla
1/3 cup buttermilk
2-1/2 cups flour
4 Tablespoons cocoa
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon cloves
2 cups grated zucchini
1 cup nuts, optional
Directions
Grease and flour a 13 x 9 x 2-inch pan; set aside. In the bowl of an electric mixer, beat together butter, oil and honey. Add eggs, vanilla and buttermilk; mix well.
Combine dry ingredients and add to honey mixture; mix just until combined. Stir in zucchini and nuts, if desired. Pour into prepared pan. Bake 30 minutes in a pre-heated 350°F oven. Dust with powdered sugar, if desired.

Really, love the recipe, havn't tried this with zucchini. Sound good.
