If you like sweet potatoes, you might like this recipe. I adapted it from a gluten recipe posted by Christine Johnson on "Taste of Home." A gluten-eating person ate one and loved it.
1 C baking/biscuit mix (I used Bob's Red Mill, but you could probably use 1 C GF AP flour, plus 1-1/2 tsp. baking soda and 1/2 tsp. salt)
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 C nectar (I used coconut nectar)
1 C mashed sweet potatoes
1/4 C oil (I used melted coconut oil)
Blend dry ingredients. Blend wet ingredients. Thoroughly mix the wet and dry together.
