As far as the racism goes, I think Disney is pretty accurately reflecting the general white-America racism of any given period. A lot of those clips are from the 50s, 60s & 70s and were "acceptable" back then (by whites). Even in modern-day Disney racism, while they can't be excused for perpetuating a stereotype they are kind-of a guage for the racist undercurrents of our society.

In the masculine stereotypes, I was skeptical about this guy's argument at first because the characters in the first movie clips he was pointing out are SUPPOSED to be douche-bags. The audience is supposed to get that the biggest guy is not always the best, the richest man not always the wisest, and someone who lords their power over others is a major jerk. So I found his examples lost his argument if put back into their individual contexts.

But the Mulan example was winning me over. And everything after that got more and more compelling.
