This may seem to be an odd topic, but I'm curious. Down here in Texas we use cane syrup and molasses for pancakes, waffles, and, sometimes, biscuits. Growing up, I saw t.v. programs about maple syrup,,,,how it was drained from trees, then boiled down to syrup. It looked like a fun thing to make and eat. A few years ago I decided to try it. There was economic shock! Where the most expensive cane syrup was, maybe $3-$4 for a little less than a quart, maple syrup costs $4-$5 for a few ounces. But, I was determined. The flavor was terrific. A bold flavor indeed. But, it was so thin! All that boiling and still that thin? One bottle would maybe handle two servings of pancakes or waffles. Now, questions. For those of you who live in the maple area. Is it that expensive where you live? Do you consider it thin? Do you use it a lot? The closest I've found to it down here was Log Cabin when it came in that house shaped can.

I grew up in maple country. Authentic maple syrup is not terribly thick, because at a certain point if you boil it down to far it stops being syrup and becomes a grainy sugar. We made our own when I was a kid growing up and that was always a problem. If you went even a little too far it started to grain and you got this sticky crumbly sugar. Our syrup was never as thick as the corn syrup with caramel coloring and chemical flavors you often see passed off as "maple syrup", but I have seen some that are thinner.
Yes, it is expensive. Making real maple syrup instead of flavored sugar syrup is time intensive and labor-intensive. Until you have slogged through snowy woods, carrying oak buckets of syrup to a big iron pot boiling over a fire, you have no idea! Even commercial operations can't avoid the time and labor needed to tap, collect, and reduce sap to a syrup.
My mother's family is Polish, and we always just use honey. Nice and thick, and not too expensive.
There are different grades of syrup based on coloring and flavor but like Leo said, the consistency is thin and it is labor intensive which is why you get so little for the price. A little note to the wise if you're looking to buy syrup, to be called "maple syrup" it has to be almost entirely made of maple sap while "maple flavored syrup" is maple syup with additives and anything labeled "pancake syrup" "waffle syrup" or "table syrup" (like that Log Cabin stuff you bought) isn't maple syrup at all which is why it's thicker. You go to any restaurant for pancakes or waffles or anything else you'd use syrup for and they're going to probably bring you the fake stuff around here. I would venture a guess that's the way it is in most places though.
It's been a while since I've looked to buy maple syrup or even looked at the imitation stuff so I really can't say whether that's expensive or not. Probably about the same around here though would be my guess.

Unfortunately they seem to be cutting down so many trees, we are losing so many sugar bushes, and the weather plays a big part in the cost....if the sap doesn't run....the cost goes up.
