While I was graveyard manager of Sambo's in my home town, my manager decided I wasn't needed. He figured a head waitress, a couple of other waitresses, a cook, and a dish washer could handle the drunks that came in after the nightclubs closed. So, I was out of a job. I had earned a lot of overtime pay while I'd been working there so there was no reason to hurry to find another job. About a week later, I went out and hit a bunch of the club's and by the time they closed I was feeling no pain. I figured Sambo's was the safest place to get a cup of coffee and come down a little bit. It was chaos when I walked in the door. Customers were yelling and the waitresses were running around like chickens with their heads cut off. I took a seat at the counter at the far end and asked a waitress what was going on. She told me the cook had quite and walked out. Well, the crowd was getting mean and louder so I told her I'd cook. I checked the cook station and the cook had turned off everything,,,grill,,,fryers,,,and charbroiler. I called the waitresses to the station and told them to tell the customers what had happened and if they would wait, their orders would be made. I turned everything back on. From this point, what I write was told to me because I don't remember any of it. The tickets lined up in front,,,about a dozen or so. I was throwing steaks and burgers on the charbroiler from 5 feet away or farther,,,,flipping pancakes 2 feet in the air,,,handling a dozen and a half eggs frying and 2 pounds of bacon. I was even dancing and singing. The bar run finished in a couple of hours and I sat down to breakfast,,,which is was my pay. A waitress had called the manager and a cook showed up to finish the shift. Funny,,a week later I got a call from the manager saying the shift needed me!

Wow! What a story. Sounds like they may have had some regrets. Guess you turned up at the right time. Like the old saying goes, "You never miss what you have until you lose it?" Or in your case, downsize.

good story! can totally relate to a restaurant needing a proper manager. i know of a guy who forged his was into being a manager of a restaurant and bankrupted them because he had NO CLUE what he was doing. sounds like your boss, was equally clueless and lucky it was caught in time! lol.
