How would you like to go to a small store where you could find a meat case full of fresh meat. Where you could buy any amount of any item? Take a look at the meat case. That's all you can do because it's not self-service. Picture foot tall stacks of sliced bologna, pressed ham, and American cheese. Beside them are loaves of pickle and pimento loaf, olive loaf, boiled ham, baked ham, chopped ham, salami, pepper loaf, and liver cheese. Next to them are two different kinds of summer sausage, one with whole pepper corns and one with crushed pepper, and a big long tube of Braunswieger(goose liver). Behind them is a big tall round of rat cheese. Next to them is a big tray piled high with fresh ground beef and next to it another tray of fresh pork sausage. Behind them is a tray of thin sliced round steaks, each slice separated with a sheet of pink butcher paper. Next to the sausage is a platter of shoulder round streaks, a platter of"7"(chuck" steaks, sirloin and T-bone steaks, and beef chops. Behind them is a platter of veal cutlets separated by butcher paper and a small tub of freshly sliced beef liver. On a large platter are three different types of roasts. Next to them are are two platters of pork chops,,,one center cut,,,the other, end cut. Behind them are pork roasts and spareribs. Behind them is a platter of beef short ribs. Next to the pork chops is a row of one packages of bacon with a big slab of bacon to slice to order, with a platter of salt pork behind. And at the very end of the case is a big tub of iced down frying chickens. Now think of this. You can get as many slices of any lunch meat you want. Need 2 or 3 slices of bologna, five slices of American cheese, 5 or 6 slices of pressed ham and a few slices of some of the other lunch meats? Just ask! Those still in loaves will be sliced to order. Want a thicker slice of bologna? Done. How about a half pound of summer sausage? Slice it for you? Sure. Rat cheese,,how much? Just enough for lunch? Get a few slices of summer sausage, a Big Red, and a small box of crackers. Okay. Half a pound of ground beef? No problem. Steaks? Want a thicker cut? No problem. Oh, and you want fried chicken for Sunday dinner. Cut it up for you? Done is 30 seconds by hand. All are wrapped in pink butcher paper. And what's Mike doing? Aw, he's grinding more beef. It's always fresh. Everything is hand cut. Every steak, pork chop, and roast. I just described my dad's grocery store. He called it a grocery and market, because along with the meat market, he sold a full line of groceries and fresh produce. Remember?
