My dad owned and operated a grocery store for many years. The meat market was the star of the store and he was known for it. Many times people would buy their groceries at a chain store and their meat from Dad. He kept things as fresh as possible, cutting steaks and other things fresh if he ran out with an hour left till closing time. He wanted everything fresh for the next day. Because of this, we ate his leftovers, whether it be steak, pork chops, roasts, chickens, or ham. Sunday dinner was a special time for our family. It was the only time the whole family ate together. So Mom tried to make it special by telling Dad what she wanted, then calling him a couple of times Saturday to remind him. Well, one day, she forgot. She called about an hour before closing telling Dad she wanted a roast,,,,no substitutions. That's was bad news for Dad. He'd sold his last roast about five minutes before her call. What to do? There wasn't a hunk of meat in the store. After a while, he came up with an idea. He had a bunch of 7-steaks left over.(some of you might know them as chuck steaks.) He pulled out eight, stacked them on top of each other, and tied them together with butcher's twine. When we got home, Mom asked what kind of roast he brought and he told her a 7-roast. She unwrapped it right then and there and saw his invention. She asked him how to cook it and he told her just like any other roast. For one thing,,,,it was easy to slice.
