I ate a lot of homemade air pop white popcorn, and drizzled it with butter from Irish grass fed cows.
I made a big pot of soup/stew with homegrown potatoes, carrots, celery and onions, along with some organic turkey bone broth made from the bones of the turkey I roasted. I cooked up 6 pounds of baby kale, spinach and chard, with 1 # chopped onions, added 2 pounds diced tomatoes, and those are the most festive (red, green and white) greens ever, especially sprinkled with white feta cheese.
We finished the soup/stew and then enjoyed broccoli and tofu stir fries for a few days, since we buy broccoli in a 3 pound bag of just the tops. It was the best bag of the year, very fresh.
I made whole wheat baking soda pancakes using 6 cups soy milk, 6 eggs, 6 T coconut oil, and about 5-6 cups flour, 6 T Bragg's AC vinegar and baking soda and Real Salt. Then I diced about 10 bananas and cooked them with some butter and a wee bit of maple syrup, and we put the banana mash on the pancakes. I ate 6 of them, ok, maybe 8......I plead the fifth. The rest hubs eats, he pops them in the toaster. He just finished up the banana mash this morning. Sometimes I make a berry mash with strawberries, raspberries and blueberries, just enough syrup to give it some flavor, and a little butter so we don't need to butter the pancakes, we use less that way.
I made over a gallon of fresh juice from peeled carrots and beets, celery and apples, all organic. It takes close to 12 pounds of produce to make a gallon of juice. Then we have 1-2 quarts a day.
And I got on the elliptical trainer and watched a few shows while I worked out. Winter is a kind of hibernation for me. We are going to go see a movie tomorrow night, with some friends. Star Wars or Concussion. Maybe both!
We had a Christmas party on the 19th, it was fun, Hot Tub and some card game where it's dumb questions on the black cards and wild answers on the white ones, and they decide which is the best answer. OK, it's called Cards Against Humanity. LOL
I have my thermals on 24/7. Fleece, fur lined boots. I keep it at 69 in here.
Hope it gets warmer soon. I have been making warm milk to drink, instead of tea. 50 ounces of hot water and 10 ounces of homemade melon seed milk. I made pecan milk yesterday, but it has a lot of calories!
