I've been keeping a pot of quinoa in the fridge to put in salads, and lately I've been mixing it half and half with oatmeal. Yum. My winter recipe is cooked oatmeal w/ added flaxseed, coconut, avacado, and berries or pomegranate (whatever I can find organic).In the summer I use raw oatmeal and add a mashed banana.
I love the versatality of quinoa. I make it like a Mediterranean dish, or a dessert with cranberries & walnuts. It can do just about anything you ask of it. I like that idea, adding to oatmeal. Oats oats oats!
MMM, I've never tried oatmeal with avocado. But I LOVE it on the Oat cakes! And I just found almost 25 pounds of oats we didn't know we had, the steel cut Bob's Red mill organic from Coscto. yippee! I'm thinking about making some tortillas with oats and flax.
Quinoa, you know, I didn't like it at first, and now I love it. It makes a great salad. I cook it up with pink lentils and use it as a soup thickener. I also made some quinoa cakes adding mushrooms, onions, garlic, parsley, and eggs or flax seed meal and then cooking them like pancakes.
