I use Oat flour, coconut oil, organic sugar, but you can easily substitute another sugar. I might do that once the financial situation improves around here.
I guess it would depend on what kind of cookie you want, crisp or soft, chewy. etc. My favorite cookie is oatmeal, but it's not a typical oatmeal cookie.
Use mixing paddle, not the dough hook. Use speed 2. Cream oil until soft.
Mix sugar and cocoa. Add to Oil and mix it in well.
Add spices.
Add Milk, vinegar and flaxseed meal.
Mix flour, baking soda and salt and add.
Move to large bowl. Add oats and nuts. Stir. Should be thick.
Bake @ 350 for 12 minutes, 2 pans at a time. Use parchment paper on pans, 2 T of dough per cookie. Then switch pans on oven shelves and bake 12 minutes more. When you smell them, they are almost done. Another 5 minutes generally. Cool on racks and store in the fridge to keep them crisp.

1/2 cup vinegar
2 cups flaxseed meal (again)
4 T cinnamon

1/2 tsp each cardamom, clovers, chile pepper
8 c pancake mix (for each cup of flour add 1/2 tsp baking soda and 1/2 tsp salt)
8 cups quick oats
1 1/2 # walnuts, chopped or broken
This recipe makes 10 dozen.
The way to know how much sweetener to substitute is to look at the calories. A pound of organic sugar has about 1700 calories, so look at the label and do the math. It looks like coconut sugar has the same amount of calories as sugar.
Agave would be more like honey. If you use it you would also want to cut back on the carrot juice and vinegar. Measure 2/3 cup of agave syrup for every cup of granulated sugar called for in your recipe. Reduce the other liquids in your recipe by 1/4 cup. Basically to activate the carrot juice as a catalyst for the baking soda, you need to add about 2 T vinegar per cup of liquid. So if you use agave in the first recipe, which calls for 2 cups sugar, you would use 1 1/3 cups agave, 1 cup carrot juice and 2 T vinegar.
In the second recipe, 2 cups agave, 2 3/4 cup carrot juice and 1/3 cup vinegar.

I have cut the recipe before posting it. The first recipe fills two 1 gallon Earthbound Farms lettuce boxes. The second requires a third box. But it doesn't get full.

1 cup molasses
2 cups water
2 cups fresh orange juice
2 T vanilla
1 tsp almond extract
1/4 cup cinnamon
1/4 cup ginger
6 cups oat flour
1/2 cup coconut flour
2 T baking soda
2 T salt
8 cups quick oats
1# walnuts
1/2 pound craisins
1/2 pound raisins
Cream coconut oil and sugar.
Dissolve the molasses into the water and orange juice, mix well.
Add a cup of flax seed meal and a cup of the liquid at a time and let it mix in.
Add the spices.
Add the flour, baking soda and salt
This will fill a 5 quart mixing bowl. I use a Kitchen Aid.
Move the batter to a bigger bowl.
Add the oats, nuts and seeds and use a big spoon to mix it all up.
Line 2-4 cookie sheets with parchment. I use 11x15 jelly roll pans, with the sides.
place 15 egg sized globs on paper and flatten slightly, also push any fruit pieces into the batter, as they tend to get overdone in the oven when they stick out.
Bake at about 325-350. I put 2 pans into the oven at a time, on the 2 middle rack levels, then switch the pans on the racks half way through so they get baked evenly top and bottom. About 15 minutes on each rack. You'll smell them when they are almost done. Let cool on pans for 10 minutes or so, then transfer to cooling racks. If you make them the right size you can get 8 of them in a double row in the Earthbound farms spinach and baby greens 1# boxes. You can get about 32 in each box easily.
This recipe makes 10 dozen. You are welcome to cut it in half if you don't have large enough bowls.
