This is weird, because I don't like celery, but I got some from the coop so I put it in my smoothie. And it was the best smoothie ever! The celery was such a nice counterpoint to the fruit and greens. I've made it three days in a row and I'm looking forward to lunch again. I'd been feeling in a smoothie rut.
shadow, you can always just use the inner ribs that have less strings. Or, you can slice the celery crosswise before adding it to a smoothie.
I make smoothies with the juice from carrots, apples, celery and beets. I have added celery directly to a smoothie with the Vita Mix, but I wouldn't add the other stuff, too much fiber. Celery is 95% water, so it's great in a smoothie. The organic celery is so much better than the commercial stuff! We go through a couple of plants a week. I buy them 6 at a time and then cut the top and bottom off and soak them, I use a soft OXO bottle brush to get the dirt off, then cut them to fit in the 1# plastic boxes from organic lettuce or spinach. Generally the tender middles get eaten and the tougher outer ribs get juiced. We eat celery almost every day, as it is chock full of minerals.
