I dry all my own in a dehydrator. Use them in teas, tinctures and cooking.
I also dry tomatoes, peppers, pumpkin, blueberries, raspberries, onions, chard, bok choy, apples, just about anything..
Nothing goes to waste around here..
Fruit left overs are frozen, dried, or made into wine if there is enough for a gallon jug.
Happy Gardening,

In the spring and summer I like to eat Marigold flowers and coneflowers with my breakfast.
I like to grow loads of different Thymes, mainly cos I use them alot in cooking, and Rosemary, majoram, chives, orangano, mints, fennel, Lemonbalm (melissa). I have rosmarinus officialia with the blue flower and I also have one with a pink flower but not sure what the genus is of the pink flowered one, do you happen to know?
I would like to grow lemongrass too.
Re medicinal uses:
I've used Feverfew for headache in past but it didn't work for me, prefer wild wild lettuce anaesthetic, although found that only seems to be affective in getting rid of pain just as it is coming into flower, think the opiate in the leaves is more potent then, the Victorians cultivated it in UK to produce a wider leaf, grows on curb sides here.

I've used peppermint to make peppermint tea also quite useful for tummy and headache I think, refreshing and soothing.
Fennel is also good for tummy upset.
When feeling a bit low I've used Melissa to make tea which is suppose to lift the mood.
Calendula is a great skin healer if you mascerate petals in carrier oil. You could do this with camomile, lavender too (so long as plants are free from pollutants and pesticides).
Nearly all herbs have great medicinal value so its good to use them in cooking, they do aid food digestion too.
(I have studied aromatherapy so know a little of the healing properties of herbs and plants).
