
I got some butternut squash from my cousin and made some awesome soup yesterday! Even though the weather is still unbearably hot and refuses to be fall like. My air conditioner went out but I've still been in the mood lately for some nice healthy fall soups.
Anybody else make soup out of their squash? Share recipe??
Home grown squash is so much better than those rock hard tasteless things at the store. I unfortunately cannot grow squash at my house because of the squash bugs.
Anyway I used 2 smallish butternut squash, chopped the ends off and peeled and scooped them out. I cut into small chunks with half a large sweet onion and put in my crock pot with garlic, olive oil, 1 can low sodium chicken broth, and one can of coconut milk. You can use any spices you want, but def salt and pepper. I put it on high for 4 hours or so. Near end of cooking time I added half a pound of red lentils and some water and adjusted seasonings. I served it with sour cream, bread sticks, and salad. It was very filling; lots of fiber and protein.
I used to be a chef but never learned how to do housewife cooking with crock pots and stuff. I'm all about slow cooker recipes this fall. It saves me alot of time and stress at dinner.

Anyway, for years and years I bought one crock pot after another. Meant to use them, but didn't. Always ended up giving them away as gifts.
I finally broke down, bought one and opened it right away, so I could not give it away. I now use it often. Stews, soups, boiled dinner etc.
I used to cook, (part time) for a caterer. I'm more of an old fashioned down home farmer type guy. I like old fashioned comfort foods that generations before cooked on a daily basis.
Chicken and dumplings, large roasts, chicken or beef pot pie, homemade breads and everything from scratch.
I grow several types of squash each year. That produce very well. And squash can last months before cooking.
I want to join your cooking group. Not sure if I ever did. Lol.
It's crazy how expensive food is. I've always cooked really basic wholesome from scratch food. Idk how to use all this convenience stuff in the stores. But now even the healthy stuff is expensive!
