
Well, I'm pretty well done with canning, almost out of jars. The used pressure canner I bought a few years ago turned out to be no good after being stored in my shed, it is now damaged. And this year I finally managed to grow a good enough green bean crop to have enough to can. So disappointing. Of course I know some people who offered to let me use theirs, but then they wanted a share of the crops and I didn't wanna share. I also didn't want to buy a new one and I don't like pressure canning anyway.
Of course the old old people had a different way to do it. Mom says mammaw did it the old way but mom says it isn't as safe like that and you have to do it outside. I think I could do it but after my scalding accident last year I'm just gonna stick with my trusty hot water bath canner inside on the new stove I bought for Christmas.
Mom got me a vacuum sealer for Christmas one year and I finally put that to good use this year with the green beans and corn. Green beans have to be blanched first but I didn't blanch the corn. I hope it turns out ok. We had an awesome onion crop this year so I vacuum sealed and froze those as well.
My elderberry jelly never would set so I have elderberry syrup instead, which is fine. I made some sun sugar and habanero jelly tho, and that turned out perfect. Over the weekend I canned the rest of the tomato juice and pasta sauce. I also did some Rotel with fresh cilantro from the garden. I've found cilantro does better if planted in July. I only did 5 pints of regular crushed tomatoes and I have 2 empty pint jars and tomatoes still growing so I might do a few more crushed tomatoes.
I had a great rhubarb and strawberry harvest this year and I put alot up in the freezer but soon I will need the freezer space because I have 3 very healthy cushaw plants and will need to freeze the cushaw I don't use/sell so I can make pies later. The solution? I have some clear gel coming in the mail this week so I can make canned strawberry rhubarb pie filling. I want to go this weekend and get some apples and make pie filling from that too. I still have several quart jars left, not many, but some. I figure I will make what I can until I run out of jars. I have some quarter pints left too, maybe I can make some kind of fruit butter in those, we made hot sauce in some.
My coworker/neighbor said I can have all the peaches and persimmons I want this year from her house. I don't like peaches but I will process and freeze persimmons.
We don't have chickens but we get a ton of free eggs. I have some old glass mayonnaise jars, I think I will make some pickled eggs this year from my leftover kosher dill mix, maybe add some red pepper flakes.
And then I will be done with gardening, harvesting, and preserving this year. I have lots of other projects to do after that, and I start a second job tonight.
