This is a group for folks to share recipes, tell stories about their triumphs or even disasters in the kitchen.

A young mennonite girl I work with has spent time in Haiti and several other countries doing missionary work. Being in warm, tropical climates, she has had tastes and grown fond of tropical fruits (mangos , avacados, pineapples...)
She was filling us in on some little known facts about coconut. When they are the best is when they are fresh picked and green. (Easier to open, plus filled with coconut water , which is to be very healthy and I think full of electrolytes) I always thought they had milk in them. When they are brown and hard is when they have fallen from the trees and are aged a bit.
An opportunity did arise suddenly and she is currently in Domenika (again working on a missions trip through Easter week) She sent pix and added the caption... "I still can't escape produce" Their first day they were helping out at a passion fruit farm. The weather looked beautiful and amidst the palm trees she did say she saw many brown coconuts along the way.
This has peaked my curiosity and I will have to dig a bit more ....
Good source of keytones... excellent to rehydrate. Great source of vegetable protein. Is beneficial to promote weight loss. (helps boost metabolism and curb hunger) and fight off disease.
I do believe it deserves at least 3 stars. lol

For me...it's okayyyy. (I don't NOT like the processed stuff or it any other way.)
Once I got one to show the kids, but they weren't all that into it.
As for missionaries, I think it's okay if they go down and support the LOCAL BELIEFS. Pushing one's religion (even in a very quiet way), I think if taking advantage of someone else's misfortune to promote your OWN beliefs.
***I'm atheist. IF your house burnt down, would you want me coming to "help" and converting YOUR kids? Or giving your grandparent one last time to convert before she dies?? Probably not.
Missionaries...probably one of the most obnoxious things that Christians do.***
plus I lived on Guam for Five years.....coconut was nothing thrilling to me....I drank the fresh juice at least once....no big thrill...mango and papaya are common there and I had some but I did not really do much with the fruits....
I do believe we all need something to believe in... whether it is a structured religion or quite simply the absence of. For me, I also hate to have others try to impose their beliefs on me.
She told me stories of how they had to keep track and watch the children because they had to administer a pill for them to take daily while there. (I believe she said it was a type of supplement, but it also worked to fight off parasites) They would comeback in the lines and try to get more as it was like candy to them (but too much could get them sick, plus there would not be enough for others) They did also help to build shelter and a place to worship.
