Don't know if anyone would be interested in this one, but it is one I did come up with myself. I took it to test on coworkers and now it has become a favorite that is often requested,   The best part is.... it is a no bake.... just whip together and throw in the fridge overnight.

large graham cracker crust.   2 cream cheese (room temp).  1 cool whip thawed. 2/3 can of crushed pineapple with juice.  3/4 c shredded coconut  (additional 1/2 c coconut (toasted)  t vanilla  . 1/2 t rum extract.

Beat cream cheese... add pineapple, shredded coconut. Mix well. Add cool whip. Mix in vanilla (and rum extract if desired)

Fold into graham cracker crust (could also try shortbread crust as well) Sprinkle toasted coconut on top. Cover and chill til ready to serve.
