So tonight we are having Curry Chicken with lentils served over rice for dinner. I'm cooking the Curry chicken with lentils in the slow cooker. FYI I have a rice cooker also easy cooking here just put the ingredients in the pot set it and forget it for a while and just let it cook. No standing up on your feet in the kitchen slaving over the stove. For this recipe I will be using 6 Chicken legs, some lentils about 1 cup, 1 medium size yellow onion cut up in large pieces, about 1/2 tsp. of fresh minced garlic, afew fresh twigs of thyme whole, about 1/8 tsp. of ground black pepper, some yellow curry powder Jamaican style if you can find it I'm using the great value Walmart brand because I don't live near a market that sells International Island food. It's pretty good though! I love Walmart! I am also adding about 1/4 tsp. of garlic powder, 1 envelope of lipton onion soup mix,I want to say that I use about 2tbsp of curry I use curry pretty liberally. I use mild curry so it is not hot. I add a little bit of cajun seasoning to mine about 1/8 tsp. I like my food to have good flavor but I don't like it hot. I add a little bit of adobo seasoning too about 1/4 tsp. I mix this all together good in a big bowl with my hands I wear gloves so the curry doesn't turn my nails yellow and so the smell of chicken and curry will come off my hands some time this century lol. Then I add it to the slow cooker and add about 2 cups of water and turn the slow cooker on high. Then I let it cook for several hours until the chicken and lentils are completely cooked through and very tender. Then serve hot over rice.
