sesame crackers
two cookie sheets (crackers are cut into 6x8=48) 350 degrees
Ingredients:
3 cups blanched almond flour
1/2 teaspoon salt
1 cup toasted sesame seeds
2 large eggs, whisked till frothy
2 tablespoons oil (they recommend grapeseed or olive...I use anything I have)
mix all the dry well, add the wet. separate into two halves
use parchment paper (mark the size of the cookie sheets on the paper, makes it easier to know how big to roll)
place one half on each piece of parchment, and use a third piece for the top to roll out to 1/8 inch thick.
(I added one tablespoon of water to make it a little easier to roll.
cut with a knife into squares...if you do 6 x 8 = 48 x 2= 96 the total carbs is 132/96 = 1.4 carbs each....10 = one carb point.
bake for 10 minutes...or more...until golden brown.
I found that when I take them out of the oven, slide the paper onto a cooling rack and bending the still warm crackers upwards breaks them evenly along their cut lines.

I like to have hummus, shredded cheddar cheese, and spreads on something that is not so starchy.
