I found this recipe a long time ago but just perfected it yesterday. For those who can't have mashed potatoes, this is just perfect.
Florets from one cauliflower
Butter or Smart Balance
Onion Powder
Garlic Powder
Parmesean cheese
Greek Yogurt
salt and pepper (optional)
Steam florets with a little water (do not boil) until they are very, very soft. Make sure there's no water left in the pot and mash with a potato masher until almost pureed. Add a little each of the above ingredients, mix and enjoy.
I eat lots of salads. Here's one that I love!
Ingredients
Butter lettuce leaves
Salt
1 tablespoon fresh orange juice
Freshly ground pepper
1 large orange, peeled and sliced
1/2 cup red onion, chopped
1 teaspoon white wine vinegar
1 tablespoon minced fresh cilantro
1 cup Jicama, julienned
1 teaspoon olive oil
Directions
Line plates with lettuce.
Top with orange slices.
Mound with jicama.
Sprinkle with chopped red onion.
Blend juice, vinegar, salt & pepper in small bowl.
Whisk in oil in thin stream.
Spoon over salads.
Garnish with minced cilantro

Frozen or fresh brussel sprouts
Canola oil (or oil of your choice)
Parmesean cheese
DO NOT COOK SPROUTS
Put sprouts in bowl and mix a small amount of oil in - just enough to cover all sprouts
Pour liberal amount of parm, cheese and mix
Put in oven and roast until the sprouts are almost black. The outside will be crisp and the inside will taste like mashed potatoes.
7 oz container of Greek Yogurt
1/2 packet of sweetener of your choice
sugar free chocolate syrup
Mix sweetener in yogurt and add enough syrup to cover
Mix and Enjoy
Carbs are a bit high at 28 per serving but as a main dish it's very good.

Serves 2
Ingredients
1/2 cup pineapple juice
2 garlic cloves, minced
1 teaspoon low-sodium soy sauce
1/4 teaspoon ground ginger
2 salmon fillets, each 4 ounces
1/4 teaspoon sesame oil
Freshly ground black pepper, to taste
1 cup diced fresh fruit, such as pineapple, mango and papaya
Directions
In a small bowl, add the pineapple juice, garlic, soy sauce and ginger. Stir to mix evenly.
Arrange the salmon fillets in a small baking dish. Pour the pineapple juice mixture over the top. Put in the refrigerator and marinate for 1 hour. Turn the salmon periodically as needed.
Preheat the oven to 375 F. Lightly coat 2 squares of aluminum foil with cooking spray. Place the marinated salmon fillets on the aluminum foil. Drizzle each with 1/8 teaspoon sesame oil. Sprinkle with pepper and top each with 1/2 cup diced fruit.
Wrap the foil around the salmon, folding the edges down to seal. Bake until the fish is opaque throughout when tested with the tip of a knife, about 10 minutes on each side. Transfer the salmon to warmed individual plates and serve immediately.

Jar Alfredo sauce (1/4 cup for 2 carbs)
-Cook in a crockpot on low for 6-8 hours
Roasted Broccoli (fresh broccoli drizzled with olive oil and garlic/salt/pepper seasoning and then cooked at 350* till desired tenderness)
Mix 3 ingredients and enjoy!
