Not sure about soy products other then what I read and it is the same as you have stated, yes and no?
Tofu?? I have had it once that I liked it and didn't realize that is what it was in a salad, I really thought it was cheese. It absorbs the flavor of what it is in. However, I have had a lot of bad tofu too! Yuk is my sentiments also!
I would do the tofu if I could get it like I had it that once, but when I buy it, it is mushy eech! Oh yes, it is great for you they say.??
I agree that I must have firm tofu. My cousin taught me to get the firm and then fold up a kitchen towel and let the brick sit on the towel on a plate in the fridge overnight. It gets less "scrambled egg" feeling.
Also, slicing it, putting it in marinade and grilling it with veggies at a bbq is good too. My veggie/vegan friends think I am a genius for thinking that up.
You can put soft tofu in the food processor and slip it into things that are mayonaise - y I like dry ranch dressing mix, fat free cottage cheese and tofu as a potato topper or salad dressing or veggie dip.
Sometimes I come across some really malnurished kids through foster care. We have to think of ways to sneak in extra protein. Plus I know a lot of kids on ADD medication and they do not want to eat. If we can take something "junk foodie" like ranch dip and turn it into a lean protein source...it's a good day!
That is a kewl idea you have about putting it on a kitchen towel. i never knew that. That is one thing I didnt like about tofu was the consistancy. Thanks so much for all the ideas!!
