
So potatoes. So good. They go with everything. But man do they take forever to make! When it's hot I don't want to heat up my oven to bake potatoes or tater wedges. I blew up my last microwave trying to make them in there, which isn't as good anyway. Heating up stove uses too much electricity. Mashed potatoes take a lot of work and boring and unhealthy.
So last night I decided to cook some tater wedges in my crock pot! It worked! They weren't crispy, but still tasty and healthy.
4-6 medium cheap potatoes
A drizzle of olive oil
2 tsp spicy brown mustard
1/3 cup unsweetened almond milk (30 Cal per cup)
Onion powder, chives, steak seasoning, seasoned salt.
Don't have to peel potatoes, just wash and cut into desired sized chunks.
Turn crock pot on high and throw in taters. Add milk. Drizzle with olive oil and sprinkle on desired amount of seasoning. I always use a ton.
Cook for 3 hours. Toward end of cooking, you can stir then grate some sharp cheddar cheese on top and allow to melt. Goes great served with sour cream.
