Wow was this an easy recipe to do in my slow cooker on my day off! I served it with cornbread since it reminded me of beans and cornbread, but any homemade bread would be yummy. It was also super cheap!
1 lb split peas ($1.19)
1 pkg ham neck bones ($3.48)
6-7 cups water
3 chicken bouillon cubes (depending on desired richness and saltiness)
Or you can used canned low sodium chicken broth. There are 2 cups in each can and cost about .47 cents a can.
1 medium onion, finely diced
About 3/4 cup chopped celery
1 large carrot, peeled and diced
2 bay leaves
Lots of fresh ground black pepper
1 tsp parsley
1 1/2 tsp Italian seasoning
1 tsp lemon juice
Place water, boullion, veggies, and split peas in your crock pot. Add seasoning except bay leaves and stir well. Carefully place the ham bones in there so they are covered as much as possible, then put a bay leaf at each end. Cover with lid.
I use a 6 quart crock pot. I started mine on low for 2 hours, then switched to high for 2 hours. Then I took out the ham on a plate, shredded the meat off the bone, and returned the meat to the pot. I stirred, tasted it, and added the lemon juice and more pepper. I cooked it for another hour, then removed the bay leaves before serving. Makes 6-8 servings.
