Chocolate Coconut Milk Pudding
The creamy chocolatey quality of this is where the comfort comes in I guess. I'm not much of a cook but I thought I would share this again.
Ingredients
Good quality coconut milk (I'm using Thai Kitchen Coconut Milk in a cardboard container) -- 1/2 cup
Unsweetened cocoa powder -- about 1 tablespoon
Honey -- about two teaspoons
Cinnamon -- a sprinkle
So you put the coconut milk in the refrigerate over night so it gets somewhat thickened, should be the consistency of pudding when you take it out of the fridge in the morning. Then you put however much of that you want in a bowl, like maybe half a cup or so. Then add some cocoa powder to taste, like maybe a tablespoon or so and then stir in honey to taste like maybe a couple of teaspoons or so. If you'd like you can add a sprinkle of cinnamon but that's optional. Then stir it all together and you can eat it that way or you can put that in the freezer for 10 or 15 minutes to get it a little thicker and harder (which I did).
So yummy and creamy and chocolatey and easy! Although i think the quality of the coconut milk is really what makes or breaks this recipe. The coconut milk should taste sweet and fresh right out of the carton and sometimes it's hard to find good coconut milk.
I think you can add like raisins or something too if you like.
