Unless your grandson is in danger, I would let your son and his wife make the rules for his care. They are his parents. It seems that you have been helping them out and that is a good thing, but possibly it is time to let your son take the responsibility for the care of his own family. If I were you I would pull back, go about your own life for a while, and separate yourself from them emotionally.
It is easy for the rest of us to give advice, when we likely are not following this same advice ourselves. :-)
Hang in there! In my experience, estrangement from children is on of the most painful things a person can go through.
I do think praying first for a while and getting God's direction is best. Remember that your gs is important to you and you do not want them to change the weekly visits.
Your son is a nurse, continuing his education. I believe that he would know what is the proper treatment of his son. Further, I suggest that you respond to your DIL that you accept your GS as he is skin condition and all. It appears that there is a battle of wills going on. What you and your DH believe and what your son and his family believe. As CanadianMother suggests, pull back. Be there when they call and help when asked and enjoy all people in your son's family, GS and Step GC. Praying for you. Blessings.
Pray for your family members and wait for them to come to you. You are a special daughter of God and he wants you to use the gifts he has given you to follow the path he has chosen for you. God is watching over your gs and will keep him safe.
