Today she made a veggie blend with asparagus, spinach, carrots, onions, garlic and red bell pepper along with seasonings in the skillet, she made salmon and rice with beans. We call it rice and peas. I know salmon is very good for you but I don't like salmon. I will let my mother eat it. But all in all it is a healthy meal and I didn't have to cook. The mixed veggies that she made was very good! I didn't try any of the ricewithbeans in it yet. I will eat some tomorrow. I had some roast beef with gravy and onions and some seasoned rice that was left over in the fridge earlier today. Then later on this evening I had some chicken soup that was left over from yesterday.I felt good and full of energy yesterday. But now I have my cycle and I feel aweful cramps pain in my stomach , back and legs, Not up to doing very much today so I am extremely glad my friend cooked today!
I browned up 2 onions and 3 large diced carrots with ground beef, and seasonings (salt, pepper, Whoreshire, a bit red pepper), then made mashed potatoes and served it on top. Turned out really good.Would have been good to add peas or corn too. Also I don't have any tomato paste on hand, but a Tablespoon or so of that would have been good too.
I'm working on going Vegan I think I have the Vegetarian thing a bit more down packed. I bake well. And I was wondering how to bake Vegan without eggs. I know I can use almond milk and other milk substitutes. I can also use Vegan or butter substitutes. Oil is ok flour is ok sugar is ok but what do Vegan bakers substitute for eggs when baking? I make a fabulous pumpkin pie but I don't know how to...
