I have a recipe for the BEST Frosted Lemon cookies!! I'm well known for these puppies!
I also have recipes using zucchini... With the Harvest bars and definitely the Choc. Zucchini cake you'll barely know it's in there! Both yummy recipes. Just email me if you want the recipes.

NANAS BUTTER TARTS
2 eggs
2 cups brown sugar
1 tsp vanilla
cup melted butter
1 cup currants/raisins (optional)
cup nuts
tsp vinegar
Add mix to tart shells. Bake until brown.
NANAS SCOTCH SHORTBREAD
1 lb butter
1 cup icing sugar
cup rice flour
3 cups flour
Cream butter well. Add sugar and rice flour. Mix. Gradually add flour and mix. Prick fork 2 or 3 times into each cookie.
Bake at 300 for 25 mins.
Two very EASY and delicious desserts!!!
Enchilada/Taco Casserole:
1 lb. hamburger meat
1 can enchilada sauce
1 can cream of mushroom soup
1 can cream of chicken soup
1 small can evaporated milk
1 small can black olives
1 package of flour tortillas
1 block of grated cheddar cheese
sour cream (optional topping)
Brown the hamburger and all the enchilada sauce, soups, evaporated milk, olives (drained) and simmer for about 10 minutes.
In a casserole dish, starting with hamburger mixture, layer mixture, grated cheese, then tortillas. Top with remaining grated cheese. Bake at 350 for 30 minutes or until cheese is melted and bubbly.
Top each serving with a dolip of sour cream (optional).
Enjoy.
I stick to recipes that I can throw in the crop pot.
We have a budget each month which includes groceries so I cant purchase alot of extra's. I have to stay away from recipes that call for 10-15 ingredients.
I have an awesome recipe for chicken and dumpling soup in the crop pot, its awesome. I just made it last week.
I will find the recipe and post it here.

-fresh baby spinach, cut into salad size
bites
(i like to put it in a plastic bowl and just
use kitchen scissors to go at it)
-raisins
-sliced almonds
-shredded cheddar
-raspberry walnut vinaigrette dressing
this is so quick and easy. you can adjust all the ingredients to suit your taste, and embellish it with other ingredients if you like (i like minced garlic.) just everything l in a bowl and serve. the dressing is available in grocery stores and i have found the publix brand to be the tastiest.
