Healthy Lunch Choices for at Work (or Home!)

Ok, I'm looking for advice and sharing some suggestions all at the same time. But, first, a little bit of explanation.
I'm a convenience eater. I eat whatever is convenient for me to eat when I'm hungry, which means that it's not always so healthy. This is doubly true when it comes to lunches for at work. Microwave meals, take out, fast food, or even just some candy out of the dish on the floor are all the usual subjects for what I consider my "lunch." Well, I've recently resolved that if I want to lose weight and start feeling healthier, then it's not just about how much I eat, but also about what I eat.
Well, at home, it was was easy enough to make the big changes I needed to make just by choosing healthier things to prepare at home. But work was a little harder, I mean, there's no way to prepare a healthy meal at work, and I don't always have the time before leaving to throw something truly healthy together. So, I have been relying a lot on microwave meals, but even the "lean" ones aren't very satisfying and don't really taste that great.
This week, however, I started something completely new in an attempt to get away from all of that. A friend of mine, who was raised in a traditional Japanese family, finally convinced me to give the art of bento a try. (Basically, it's a Japanese box lunch type of thing. It's been wonderful because, I can either cook the base foods on my off days and freeze them, or I can use leftovers from the healthy foods I ate the night before. Building off the base, I can then add little tidbits like fruits, and veggies, and a boiled egg or rice ball. The combinations are limitless, and the food is tasty, and I really do suggest giving it a try if you're looking for a break in the lunch routine for at work or home or even in the kids' school lunch.
Ok, that was the explanation and suggestion. Now, here's the part where I ask for advice. I'm looking for quick, healthy lunch ideas that I can make quickly before work. The stir fry and rice and left over healthiness have been nice, but I'm looking for some variety. Any suggestions would be most welcome!

I'm trying to exercise daily. I was doing fairly well until I sprained my ankle 2 weeks ago but now I'm getting back on the horse. Today I walked over a mile with my arm weights that are about 22lbs total. I was out of shape and it was hard on my arms. I also did my 30 situps. I'm also going to drink a lot of water and try to eat healthy. I do tend to have a sweet tooth but I'm cutting...
I know that you are very busy and often I find myself packing my lunch as I clean up my kitchen the night before.
I dont leave my eating up to chance or opportunity. I plan every meal out. ( I do weight watchers.) This is something they teach you. You have to think before eating. Then you are less likely to choose the bad stuff. Plan, plan, and plan some more. Bring things in that you know are healthy options and have them at work.
I had to learn that it's ok for me to put ME first in life. I make sure my home and work have things I can eat. I am a working mom and have many obiligation in my personal life that take up alot of my time. I think it's important for us to finally take a minute for own ourselves.
Cottage cheese/small fruit cup (presuming you have a refrigerator at work).
Apple sliced w/natural peanut butter --great snack.
Freeze leftovers and have a serving ready to pop in the microwave.
Wendy's chili and caesers side salad or good w/a baked potato --cheap and good for ya.
