for something sweet, my DD likes to slice up a small apple and dip it in a couple teaspoons of Smuckers sugar free carmel topping.
I'm on Metformin 500mgs 2x/day. Does this make a difference? I'm going food shopping tonight.
Greens with chopped raw vegetables (carrots, peppers, onions, etc), left over steamed veggies from the night before - broccoli, cauliflower, corn, potatoes, etc. 1/2 cup of beans (black, kidney, chick, out of can and rinsed)all dressed with salt/pepper, a tiny bit of olive oil and a large splash of wine vinegar.
Another favorite: whole grain burrito shell filled with refried beans, leftover steamed veggies, sauted onions and mushrooms, salsa, and a side of raw carrot sticks.
Fav Snacks: Vanilla soy milk with a shot or two of espresso. Sugar free cocoa with espresso. Apples with a a smear of Peanut Butter, sugar free chocolate pudding, grapefruits, oranges, bananas - fruit in general. A piece of whole grain bread toasted, spread with Vegan "butter" and sprinkled with cinnamon.
My guidelines for all meals: whole grains only, as many pieces of produces as I can manage (usually do 6-10/day), no dairy, no animal products - except fish which I haven't been able to eject from my diet. No high fructose corn syrup EVER. I also eat 5-6 small meals a day.
