It took a few weeks for the plan to feel "normal", but now, after about 4 months, it's become second nature.
Even my doctor, who was skeptical at first, is now a great supporter.

My dept. had to bring some food & realized there was no fruit of any kind provided. I volunteered to make a fruit salad -- a variation on my mom's Jewish-soulfood apple-nut salad, with just a sprinkle of chopped walnuts and chopped oranges and cinnamon added to the lemon juice that keeps the apples fresh.
It was a huge hit, so much so that when someone brought the empty dish back to my office she was still sneaking the last of the cinnamon "dressing" from the bottom of the bowl. I had som ething to eat for the party and the person next to me said she was going to make it herself for her family this Christmas as a lite alternative to all the ham and cookies and fixin's.

My overall cholesterol is in the normal range now.
Thing is my A1C has not come down but my daily BG readings have come down. Not sure why the A1C continues to be so high.
I'm working on this with my doc.
No doubt about it, I have way more energy now than before going the vegan route.
