I'm in charge of cooking tonight for my mom - anyone have an easy and cheap recipe for maybe a casserole or another 'one dish' meal?

I'm trying to exercise daily. I was doing fairly well until I sprained my ankle 2 weeks ago but now I'm getting back on the horse. Today I walked over a mile with my arm weights that are about 22lbs total. I was out of shape and it was hard on my arms. I also did my 30 situps. I'm also going to drink a lot of water and try to eat healthy. I do tend to have a sweet tooth but I'm cutting...
Cook mushrooms, onion, peppers in some oil, then some little bits of chicken.
Chuck in some chicken soup, thinly sliced carrots, sweetcorn if you like, whole grain mustard is good too, salt and pepper.
It's good with rice or pasta.
It all goes in one pot d you can add whatever you like.
mom's picky, so no tuna (too bad...I love tuna)
Spag bol : Boil or fry (in a tiny amount of olive oil) minced beef or lamb, add onions, mushrooms, tinned or fresh chopped tomatoes, basil, black pepper and tomato pure (not sure how much, just until it looks red enough or tastes tomatoey enough, I don't do recipes lol). Heat on full for around 15 minutes stirring constantly then simmer for another 15 minutes and serve with spaghetti or any type of pasta. Good luck honey x

Ingredients:
1 can (10 3/4 ounces) Campbell's Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
1/2 tsp. onion powder
1/4 tsp. ground black pepper
2 cups frozen mixed vegetables
4 skinless, boneless chicken breasts halves
1/2 cup shredded Cheddar cheese
Directions:
Stir the soup, water, rice, onion powder, black pepper and vegetables in an 11 x 8-inch (2-quart) shallow baking dish.
Top with the chicken. Season the chicken as desired. Cover.
Bake at 375F. for 50 minutes or until the chicken is cooked through and the rice is tender. Top with cheese. Let casserole stand for 10 minutes. Stir rice before serving.
Try It Alfredo: Use 1/4 cup grated Parmesan for Cheddar cheese. Add 2 tablespoons Parmesan cheese with soup. Use broccoli flowerets for vegetables. Top chicken with remaining Parmesan cheese.
Trim It Down: Use Campbell's 98% Fat Free Cream of Chicken Soup instead of regular soup and use low fat cheese instead of regular cheese.
Mexican: In place of onion powder and pepper use 1 teaspoon chili powder. Substitute Mexican cheese blend for Cheddar.
Italian: In place of onion powder and pepper use 1 teaspoon Italian seasoning, crushed. Substitute 1/3 cup shredded Parmesan for Cheddar.
I hate to admit it...I don't know much about the 'meat' industry (for lack of a better term)...

Brown some hamburger, breaking it into very small chunks. Peel and boil some potatoes. Add a can of condenced tomato (Campbells, my preference), a little salt, pepper, and paprika to the browned meat, stir it all togther, then pour the meat sauce over the potatoes. It's very simple and quick, but we like it. You can also dice some onion into the browing meat, if you like.
