My advice to you is to try to eat healthy foods and avoid alot of take-out and junkfood. With the pred, I have an increased appetite, and it is pretty difficult to control. I was ALWAYS hungry. I was at a point where I had to buy new clothes every week in order to keep up with the weight gain.
I also advise you to not beat yourself up about the weight gain. It is something that we all have to deal with with UC. When you're sick, you lose rapidly and when you're on the meds, you gain. I really beat myself up about the weight gain and I wound up getting really depressed. Just focus on making yourself well.
Don't do like I did in the beginning, I convinced myself that I could eat anything because the pred masked my symptoms so well. Educate yourself about this disease and focus on finding a diet that works for you so that you can limit your meds as much as possible...that's my new goal.
