I think you are on the right track by adding the viamins. Most cirrhotic patients suffer from vitamin deficientcy due to the digestive procsess is sped up and not allowing the body time to absorb the nutrients it requires.
Vitamin C w/rose hips is an exellent choice as it has the capability of strenghening the walls of the blood vessels. So this is very helpful to prevent hemorage from varices. The time release capsule should be the most effective. I think you will find that its okay to give her the vitamin C.
There are many things in the diet that can make the ammonia level higher. Protein from animal fat is the largest cause. I very familar with the symptoms of encephalopathy and I haven't heard of the arms flapping. this might be something to consult a phisycian about. This is very good that you are being extremely careful. Also you might mention the idea of adding Xifaxan to her list of daily medicines as it will also help maintain the ammonia level.
