Living with grandma is second to living with a mom.
Definitely ask the court of sole custody with him as the visiting parent. Then offer to barter it down to joing custody. You need to be in a position of power here when grandma sticks her nose in.
Get that legal aid if you qualify. Get that job. Offer to let his mother baby sit while you're working and GET ALONG WITH HER.
Judges will rule against mothers only if there is proof of a good reason to do so. Fair or not you've got that on your side. And with a baby it is fair.
Do not automatically follow any advise or arguments they give. They do not have your best interests in mind. Probably quite the opposite.

The judge will order whatever he deems best for the child. I did hear of one case in my state where the child was awarded to the court and taken from the parents. This was a rare case I'm sure but it's an example of how it's about the child, not the parents.
Don't give him sole custody.
Hugs to you for your pain.
