Is there anyone out there training restaurants how to accomodate people with a Gluten Intolerance? If so please let me know who they are. If not and you are interested in starting this business I think it would be a great one. I'm in the NOVA/DC area.

I am in CO but I think that is a great idea- I was diagnosed in November and out of fear have NOT eaten out once. I know there is a local chef who owns the resturaunt and is a celiac..maybe talking to him I could see if there is such a thing..maybe you could do thatwhere you are too...it could be a really great thing..I'll think about it some more..maybe others will reply with their experience
