Celiac Disease Support Group
Celiac disease is an auto-immune disorder of the digestive system that occurs in genetically-predisposed individuals. It is characterised by damage or flattening to all or part of the villi lining the small intestine, which interferes with the absorption of nutrients. This damage is caused by eating anything with gluten (gliadin), a protein found in wheat, rye, and barley...
Outback is a good resturant to try. If you eat at places where there is an actual trained chef -- not some kid who started out washing dishes and never learned from a trained chef.
The chef will be happy to help someone who really needs a special dish. Otherwise you might get a dish that is minus the bread but still seriously contaminated with gluten.
The most important thing to do is educate yourself about every aspect of this disease so you can take care of yourself. You must know everything there is to know about this for yourself. no one else is nearly as concerned about making sure your food is GF as you.
It does get easier with time and familiarity.
The thing that struck me, is that now, there is G/F products and equivalent for everything. Sauces, gravys, pasta, noodles, thickeners, soups etc. It wasnt always like this, even a humble sausage was a treat if I could find some g/f ones. even g/f bread was too back when.
Eventually, I got used to transferring my usual foods with g/f things. It was a very simple approach to a complicated health problem... not to mention the shoppping list.
So dont despair, just think about what meals you like, or are shopping for and keep it simple to start with. Learn what thickens things safely, steering clear of anything your not sure about. The old saying 'If in doubt, go without' has always been my motto.
I find its effortless to shop now, altho i still have to look at some labels. Still beware tho as I was eating Cornflakes for years thinking they were g/f and they arn't/ Kellogs contain a % of gluten. I,m sure they slipped it in somewhere along the line as they were g/f to start with.
Happy shoppping and cooking CM285
