Also, not everyone will agree with this, but I would recommend not trying to replace bread and bakery products at first. Go with naturally gf foods for awhile and then slowly add gf products. The gf diet introduces a lot of foods a person probably has not eaten before. It can be hard to separate reactions to those foods from the gluten intolerance and whatever lingering damage there may be.
